A cozy one-pot recipe to make chili in just 10 steps!
Yields: 4 to 6 servings
ingredients
3 tbsp olive oil
1 large yellow onion, diced
2-3 large garlic cloves, minced
1 red bell pepper, diced
2 stalks celery, chopped
1 small- medium zucchini, grated and excess water squeezed out
2 1/2 cups pumpkin, cubed to 1cm
1 tsp salt + 1 tsp pepper
2 tbsp ground cumin
2 tbsp chili powder
2 tsp dried oregano
1 can (28oz) tomatoes with juice
1 can of beer (best with a good ale or kolsch) or 1.5 cups vegetable broth or water
1 can kidney beans, rinsed
2 cans black beans, rinsed
juice of 1 lime
1 cup chopped cilantro
method
heat pot on medium
add onion + garlic and cook until soft
add pepper, celery, zucchini + pumpkin, cook 5 minutes
add slat, pepper, cumin, chili powder + oregano, cook until fragrant
add tomatoes + beer (or 1.5 cups of veg broth)
add beans
add vegetable stock or water to cover
bring to a simmer and then reduce heat and let cook until pumpkin cubes are fork tender
once cooked, stir in juice from lime + chopped cilantro
serve + enjoy
