easy collagen energy balls

1 ½ cup pitted dates
½ cup raw cashews
1 scoop Sproos Collagen of choice
3 Tbsp shredded coconut (optional)

In a food processor pulse dates, cashews, and collagen until well-combined.
Roll mixture into balls and then roll in shredded coconut.
Store in an airtight container in the fridge for up to one week.
