ginataang hipon with kalabasa at sitaw

Filipino-inspired coconut milk + squash recipe. Ginataang refers to cooking with coconut milk, while Kalabasa (squash) and Sitaw (green beans) help fill out the dish. Made with Hipon (shrimp), but you can use chicken or tofu. Try something new tonight!

ingredients
1lb shrimp (or protein of your choice)
salt to taste
ground black pepper to taste
2-3 tablespoons olive oil
1 medium red onion sliced
1 knob ginger, sliced
12 pieces green beans (sitaw), cut in 2 inch length
3-4 large garlic cloves, minced
½ cup leeks sliced
2 tablespoon fish sauce
¼ cup water
2 cups squash (kalabasa), cut into 1-inch cubes
1 can coconut milk (400g)
ground black pepper to taste
green onions chopped, for garnish

method
Season shrimp with salt and pepper.
Heat oil in pan over medium high heat then gently sear shrimp on both sides until cooked. Remove shrimp from pan and set aside.
Using the same pan, sauté onions, garlic, ginger and leeks.
Bring the shrimp back to the pan, then add the squash cubes, green beans + fish sauce and simmer for 3 minutes.
Pour in the water and bring to a boil.
Lower the heat and allow to simmer for 8 minutes.
Add the coconut milk and simmer for another 5-6 minutes.
Season to taste and enjoy!
