Yields approximately 14 cookies.
1 1/4 cup of organic canned Chickpeas, well rinsed and patted dry
2 tsp organic vanilla extract
1/2 cup + 2 tbsp organic peanut butter
1/4 cup organic honey
1 tsp organic baking powder (if you want 100% gluten-free sub the baking powder for
1/2 tsp cream of tartar + 1/2 tsp baking soda + 1 tsp arrowroot powder)
1 pinch of salt if the peanut butter is unsalted
1/2 cup of organic chocolate chips
Preheat oven to 350 degrees F.
Combine all the ingredients in a food processor except for the chocolate chips.
Process until very smooth.
Stir in chocolate chips.
Mix will be very thick and sticky.
With wet hands, roll 1 1/2 inch balls and flatten slightly with a fork.
Place onto a parchment lined cookie sheet and bake for about 10 minutes in a standard size oven and about 5 -6 minutes in a toaster oven.
