This simple but delicious Kale and Date Salad features a flavourful shallot vinaigrette, crunchy almonds, sweet dates + Parmesan cheese
dressing ingredients
1 tbsp lemon juice
1 tsp honey
1 tbsp shallots, minced
>½ tsp kosher salt
1 pinch red pepper flakes
2 tbsp olive oil
salad ingredients
1 bunch kale, washed + dried
2 tbsp almonds, sliced
5 dates, pitted + chopped
1 oz >Parmesan cheese, shaved
method
Add lemon juice, honey, shallot, salt + red pepper flakes to a blender + blend until mixed
Pour olive oil in as you blend, until emulsified + set aside
Remove stems from kale + tear into bite sized pieces
Add kale to large bowl + pour over dressing
Toss well until kale fully coated
Sprinkle almonds, dates + Parmesan over top of kale
Serve immediately or refrigerate for a couple of hours until ready to serve + enjoy!
