Ange from Crooked Horn Farm shares her fan-fav recipe that she invented while patiently waiting for their potatoes to be ready.

ingredients

2 kohlrabi, peeled and cubed
2 green onions, thinly sliced
2 tbsp chopped fresh dill
1-2 pattypan summer squash, chopped into small cubes 
2 pickles, chopped into small cubes
⅓ block smoked tofu (optional)
1½ cups mayo (we love this one: https://simpleveganblog.com/vegan-mayonnaise/#recipe )
1-2 tbsp dijon mustard
1 tbsp tamari
Freshly ground pepper
1-2 tbsp sunflowers seeds, lightly toasted

method
Steam kohlrabi cubes until tender, about 10-12 minutes or until they can be easily pierced with a fork. Allow to cool, then chill for about 30 minutes in the fridge.
Combine mayo with dijon, tamari and black pepper and adjust to your liking.
Combine chilled kohlrabi cubes with mayo mixture and add green onions, dill, pattypans, pickles and smoked tofu and top with more freshly ground pepper and toasted sunflower seeds.
