ingredients
½ cup rolled oats
½ banana (or ¼ cup applesauce)
1 Tbsp maple syrup
1 small egg
¼ tsp baking powder
¼ tsp cinnamon
¼ cup milk or milk alternative of choice
1½ Tbsp Peanut Butter Smooth
1 Tbsp jam of choice
Dust with icing sugar for extra sweetness (optional)
method
Preheat oven to 350ºF and lightly grease an oven-safe dish big enough for a large serving of oatmeal.
Blend oats, banana, maple syrup, egg, baking powder, cinnamon and milk in a blender until smooth.
Pour ⅔ of the batter into the baking dish. Gently spoon Peanut Butter and jam onto the center of the batter, then pour over the remaining batter.
Bake for 30 to 40 minutes, or until a toothpick comes out clean. Eat while warm.
