Created in-house by our Butcher Shop Supervisor extraordinaire Benoit - this recipe delivers a flavour packed meal that beautifully blends the smokiness of our house-smoked pulled pork from True Local supplier Cutter Ranch with the refreshing and lively flavours of cilantro + kimchi. Perfect for Kootenay summer evenings!
Serve over rice + beans, add it as a taco or burrito filling, enjoy it as a sandwich in your favourite bun or as a topping for your next salad. With it's quick preparation and versatility this recipe will quickly make it's way into your weekly dinner line up!
Serves 2 as a meal, 4 as sides.
1 package Kootenay Co-op house smoked pulled pork
3/4 cup sour cream
Half bunch cilantro roughly chopped
6-8 green onions roughly chopped
Milk - to thin sauce to desired consistency
Salt + pepper to taste
1/2 cup kimchi
Remove pulled pork from packaging, place in a pot and warm through on the stove.
While pork is warming, place all ingredients except milk into a blender and combine. Once blended, add milk and blend again, keep adding milk until sauce is thinned to desired consistency.
Remove pork from heat and place into a bowl or on a platter, pour cilantro sauce over pork, top with kimchi + enjoy!
