wet ingredients
1 ½ cups applesauce
⅓ cup coconut oil
1 ¼ cups rice milk
1 tbsp oil for the pan
dry ingredients
1 cup brown rice flour
1 ½ cups fine cornmeal
2 tbsp tapioca flour
½ tsp sea salt
2 tsp baking soda
method
Pre-heat the oven to 350 °F (175 °C) before you start.
Stick a cast iron skillet or heavy baking pan in the oven to heat up, when hot remove from oven, lightly coat with oil.
Mix wet ingredients and dry ingredients in two separate bowls. Add the wet mix to the dry mix and stir well.
Pour mixture into the heated and oiled pan, return to oven and bake for 45 to 50 minutes, cool somewhat before removing from pan.
