Serves 4 people
2 medium cucumbers
1 tablespoon red onion, minced
½ teaspoon kosher salt
1 teaspoon sugar
1 teaspoon soy sauce
1 teaspoon rice vinegar
½ teaspoon sesame oil
1 tablespoon toasted sesame seeds
red pepper flake, to taste
Slice cucumbers lengthwise and then, using a meat mallet or rolling pin, smash the cucumbers, then slice again into bite-size pieces, transfering to a large bowl.
Add the red onion, salt, and sugar, and toss to combine.
In a small bowl, combine the soy sauce, rice vinegar, and sesame oil.
Drizzle the dressing over the cucumbers, then toss to coat.
Garnish with toasted sesame seeds and red pepper flakes.
