Short on time? No worries. This 5-minute "oops I forgot (insert event), please forgive me" Molten Chocolate Mug Cake will save the day.
ingredients
6 Tbsp coconut oil
2 egg, at room temp
6 Tbsp milk
1 tsp vanilla extract
4-8 Tbsp maple syrup (or honey or other alternative)
½ cup all-purpose flour
4 Tbsp unsweetened cocoa powder
½ tsp baking powder
½ tsp kosher salt
2 Tbsp brewed coffee (optional, or 1 Tbsp warm water)
2 oz semi-sweet chocolate chunks, very roughly chopped or chocolate chips
method
Melt coconut oil in a microwave-safe bowl.
Whisk in egg, milk, vanilla + maple syrup until combined.
Add flour, cocoa powder, baking powder + salt, stirring until just combined.
Transfer mixture into 2 microwave-safe mugs or ramekins.
Divide the coffee (or water) + spoon into center of batter in each mug + gently swirl it in. Do not fully incorporate the coffee.
Place chocolate chunks in center of batter in each mug.
Microwave on full power for 1:45-2 minutes.
Dig your spoon deep into the cake to spoon up melted chocolate with every bite.
Serve with ice cream and enjoy!
note
To oven bake, preheat oven to 350f. Lightly grease 2 ramekins/mugs or muffin tins and add the batter. It will no longer be a 5-minute recipe but they should be done in 22 minutes.
