This recipe is for simple cheese quesadillas. Pair them with your favourite salsa and sour cream or get creative and add any kind of filling that inspires you - think black beans, red peppers, fresh herbs, corn, pulled pork, pulled chicken, BBQ tempeh, or chorizo. Get creative and have fun!
Serves 4
ingredients
4 large tortillas
2 cups oxacan cheese (or any good melting cheese, grated)
Include any additional fillings. If using vegetables like peppers, make sure to dice into small pieces.

guacamole (as a side)
sour cream (as a side)
method
Heat a dry skillet (if you have a cast iron pan, use it!)
Lay your tortilla's on a flat surface
On one half of the tortilla, add your fillings. Layer your cheese over each topping so the quesadilla closes well.
Fold tortilla in half
Place in quesadilla in pan (no oil needed) and cook for 1-2 minutes per side or until tortilla is golden and the cheese is melted.
Cut into wedges and serve right away with salsa, sour cream or guacamole. Enjoy!
Notes: You may need to play with the heat to make sure your tortilla doesn't brown faster than your cheese can melt. It might help to weight your quesadilla by placing a smaller pan on top of it while it's cooking to ensure even melting.
