ingredients
6 ears of corn, husked and cleaned
1/2 cup mayonnaise
1/2 cup sour cream
1/2 tsp chili powder
1/2 tsp ground cumin
1 cup crumbled cotija cheese
2 tbsp lime juice and wedges
freshly chopped cilantro
method
Heat the grill to 400F
Mix the mayo, sour cream, lime juice, chili powder and cumin in a medium bowl, and whisk
Place the corn directly onto the grill and cook for 3 minute per side (until kernels are golden brown and charred)
Remove from the grill and place on a plate
Brush corn with the mayo mixture
Sprinkle crumbled cotija cheese to coat completely
Finish by topping with fresh cilantro and lime wedge
